Birch Tapping
We finally started our birch tap season yesterday here at Alaska Haven. We enjoyed the beautiful sun and the long awaited start of spring. On the first day we already collected nearly 10 gallons of birch sap, which we will further process into Birch syrup. We will continue sharing the processing steps. We look forward to serving this Alaskan treat to our guest.
Every autumn birch trees collect and store nutrients in their roots to help with new tree growth the next spring. These nutrients are contained within the
sap that runs from the roots through the whole tree during the freeze/thaw cycle in spring. When the sap begins to flow, it can be collected for use. To collect the sap, a spout, called a spile, is inserted into a hole drilled into the tree. The spile directs the sap into a bucket. This sap can be drunk fresh as a spring tonic; used in place of water to make tea, coffee or other beverages; collected and made into carbonated drinks, beer or wine; or boiled down to make syrup.

We had such a great time baking and trying out new treats to spoil our guest…our March winner is dark chocolate fudge:)
Breathtaking Sunset
While we have lived here for over 10 years, we will never take for granted the beautiful and picture perfect scenery we get to experience. This sunset was captured leaving Alaska Haven on a cross-country ski trip. We love having the opportunity to offer our guest specialist adventures and showing them how beautiful life in Alaska truly is.

Northern Lights are in full Swing!!
What a beautiful Northern Lights season we have had so far. They have been absolutely breathtaking. We are thankful to life away from the city lights and are able to enjoy this majestic light show right in our backyard!

Enjoying every moment of Alaska’s Fall Season
Just an afternoon drive in Alaska … love the amazing views we are surrounded by. This fall has been incredible, in addition to the wonderful and warm season, we have experienced some of the most breathtaking aurora/northern lights shows I have ever seen right in our backyard.
